Last week I made a delicious Pesto Sauce Recipe. It’s such an easy sauce to mix in with some pasta that it makes a simple Easy Weeknight Dinner. However, there’s only so many times you can have pasta before you are in the mood for something different. So I’m bringing you an alternate Easy Weeknight Dinner recipe to use up some of that batch of pesto sauce!
This recipe was sort of inspired by a local restaurant’s “Grown Up Grilled Cheese” sandwich. In that sandwich they used bacon, tomato, and cheddar cheese in a Parmesan crusted bread. This is a variation on that theme. We are making a Pesto Grown Up Grilled Cheese! It’s so simple and easy once you’ve got the pesto made, there’s really nothing to it!
2 slices of bread per sandwich you’d like to make. We made four sandwiches so needed eight slices of bread.
Butter or Margarine to spread on the bread
Mozzarella cheese, sliced
Cooked bacon (2-3 slices per sandwich)
Check out how easy this is. If you can make a grilled cheese, you can make this!
Butter each slice of bread on one side
Spread a thin layer of pesto sauce on the other side of each piece of bread
Layer the other ingredients on top of the pesto: mozzarella, then tomatoes, then bacon.
Top the sandwich with another slice of prepared bread.
In a hot frying pan or griddle, toast your sandwich until the cheese is beginning to melt and the bread is golden brown.
Flip the sandwich carefully and toast the other side until it is golden.
Cut in half (or don’t, it’s your sandwich) and serve!
